Chocolate soufflé was a dessert dish.
Quark created a chocolate soufflé with Haligian tongue sauce in 2371 after Cardassia signed a peace treaty with Bajor. He named it in honor of the Bajoran religious leader, Kai Winn, who had acted in the treaty negotiations. It was apparently very popular with Quark's customers, though the Kai herself seemed more bemused than impressed by the gesture. (DS9: "Life Support")
