Eggplant parmesan is an Earth dish made from eggplant and cheese, originating from Italy.

In 2377, Neelix offered Harry Kim a choice of plomeek soup or eggplant parmesan before his mission to command the Kraylor starship he would later dub Nightingale. Kim at first said that either was fine, but after Neelix told him that a captain should be decisive, leading Harry to choose the soup. (VOY: "Nightingale")
